The Fourth of July is rapidly approaching faithful readers, and I’m sure that some of you are going to be throwing a hotdog or two dozen on the grill. It’s the American way.
So, in an effort to help you upgrade your grill game, I’m here to give you a quick tip. Using a very sharp knife cut a cross hatch down the length of your hotdog before you throw them on the grill. This will increase the surfaces available for picking up crispy grilled goodness (called the Maillard reaction if you’re into the chemistry).
Oh, you are going to celebrate the melting pot of culinary America by whipping up a bit of mostarda, right?
